Noureddine
Head chef/partner Noureddine has worked in several countries before settling in Wells five years ago. His passion is for good food and excellent service. Noureddine’s experience was gained from working across a broad range of quality Restaurants:

  • Restaurant du Port in Morocco where Moroccan and French fusion food was prepared to exceptionally high standards using only fresh ingredients
  • A traditional family owned Gasthaus in Germany using local game & traditional German fare
  • Noureddine then diversified and became a personal chef to a Saudi princess which was altogether another experience!

 

Onto ‘Blighty’ some 10 years ago where he headed up the Moroccan kitchen at London’s famous eatery MoMo’s. However, it was Frenchman Alain Allard, head chef at the 2 rosette Firebird restaurant where Noureddine’s cooking was influenced the most, Alain had worked with Marcus Wareing at The Michelin starred ‘L’Oranger’ & his passion for quality fine dining and attention to detail inspired him, so much so, he followed Alain to The Savoy home of executive chef Anton Edelman 

Following two years at The Basil hotel, Knightsbridge, home of the ladies only ‘Parrot Club’. Noureddine ventured to Wells where he worked in a local hotel before taking up a head chef role in Bath.

Nicola
Partner, Nicola is Somerset born and bred; her experience in customer service comes from 23 years in local media following a stint in retail management.

Nicola's idea of good service is to offer a warm welcome from helpful, attentive staff. If you are feeling adventurous Nicola can advise and explain exactly what the flavours and ingredients are of every dish and prefers a friendly, relaxed atmosphere rather than patronising or stuffy menus which puts people off trying something new!
